Cooking in Ecuador

I'm no chef, though I do enjoy cooking. But I find cooking in Ecuador tough. Maybe it's the recipes I find with foreign ingredients that I won't find anywhere near my home. Or maybe it's the leg work involved in gathering the ingredients.

Really it's both things and a few other differences from cooking back home. As time goes by I'm getting better at dealing with those differences and I'm also learning to work better in the kitchen.

Should you become a Citizen?

Lately there has been a lot of coverage of Americans giving up their US citizenship due to new tax laws. I've known a few people living here in Ecuador who have looked into getting Ecuadorian citizenship, not for tax reasons, but for visa reasons.

I've had several people ask me about where to stay when they arrive in or depart from Quito. Now that the airport is a good hour or so from downtown Quito there isn't the selection there used to be, especially if you are getting in late or just need a place to rest up for a few hours before you flight.

I've found the place.... Quito Airport Suites is located just minutes from the new Quito Airport in Tababela. They offer daytime rates for a quick shower or nap before your flight. And if you are arriving at the airport late at night, you're only a few minutes from a clean bed.
